My stomach wishes every day was Pancake Day. While this is not possible, I did love the opportunity to make my own pancake creation to delight my family with. The vision for my pancake idea combined sweet and healthy which is ideal in my book!
I chose to make coconut pancakes with bananas in T-Fal's OptiCook frying pan. I put a generous amount of coconut and bananas in the batter so it would be inside the pancakes. You can't forget perfectly chilled banana slices on the plate either. The coconut provided a nice hint of sweetness to the soft and fluffy pancake. Of course the bananas provided a nice healthy addition that paired wonderfully with the coconut. My belly welcomed the yummy treat instantly. Thanks to the OptiCook pan, all of the pancakes came out perfectly cooked and beautiful. It was pure pancake perfection!

Mmmmmm - pancakes! I'd make pancakes stuffed with cream cheese and orange marmalade. I've had stuffed french toast but never stuffed pancakes.

ReplyDeleteI'd add walnuts and caramel. It may sound silly but my favorite part of pancakes are the crispy edges. That's why I only enjoy them at home because I don't know of any place that serves them crispy.
