I was sent a 6 pack of lemons for review purposes.
These lemons are beautiful! They have such a perfect golden color to them too. They smelled great as well. I cut one up tonight to add some flavor to some broccoli. I squeezed some juice over the vegetable, added the tiniest bit of salt and roasted them in the oven. It came out smelling wonderful and tasted even better. The lemon juice combined with the salt was perfect and the flavors were magical together! The broccoli was fresh and delicious too. I wish I could make a lemon dessert too, but that will have to wait until I'm off my diet. These lemons would make a perfect gift for your friend or neighbor who loves to bake!
*I have a great lemon treat recipe for you! Cuta ripe lemon in half and then each half into quarters. Put on a plate and freeze for 20-30 minutes then dip in honey or agave. You will love it!

My Husband makes an amazing Lemon Herb Chicken, but I don't think I'd use these special lemons for that. I'd have to try something new with these. Something that would use the lemony skins as well as the juice!

I just found a recipe for using the peels that are leftover from making lemonade. It's for Candied Lemon Peel. You can use it in other recipes or dip them in things like chocolate it said. It sounds super cool. I bookmarked it for future reference.

I have a small Meyer Lemon tree it's not even close to giving me lemons but I live in hope --my favorite recipe uses Meyer lemons.
ReplyDeleteMEYER LEMON CAKE
Makes 12 servings
Ingredients:
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
2 cups granulated sugar
1 cup canola oil
1/2 cup plus 2 tablespoons Meyer lemon juice
2 teaspoons grated Meyer lemon zest, divided
3 teaspoons pure vanilla extract, divided
1 cup sour cream
1/2 cup (1 stick) unsalted butter, softened at room temperature
6 ounces cream cheese, softened at room temperature
3 cups powdered sugar
Directions:
Preheat oven to 325 degrees F. and grease a tube pan. Combine flour, baking powder, baking soda and salt in a small bowl.
In a large bowl, beat eggs together with sugar until combined. Beat in 1 cup of oil, 1/2 cup lemon juice and 1 teaspoon zest, and 2 teaspoons vanilla until well blended.
Gradually beat in flour mixture then beat in sour cream. Pour batter into tube pan and bake 1 hour or until a toothpick comes out clean. Let cake rest 15 minutes before inverting and frosting.
To make frosting, beat butter, cream cheese, remaining 2 tablespoons lemon juice, 1 teaspoon zest and 1 teaspoon vanilla. Gradually beat in powdered sugar until well blended. Frost cake when fully cooled and store in refrigerator.
